Using automated sorptive extraction to detect trace-level odour-active compounds in plant-based foods
Aroma Chemistry Group, Research Institutes of Sweden (RISE)
RISE’s Aroma Chemistry Group shows how automated high-capacity sorptive extraction on Centri with HiSorb makes it easier to detect trace odour-active compounds in plant-based proteins.
Switching between headspace and immersive sampling, using splitless desorption and trap enrichment to boost sensitivity, the team cuts sample size from ~500 g to 10–20 g and streamlines a previously day-long purge-and-trap process.
The result is faster method development and better correlation between sensory panels, GC–olfactometry and GC–MS, helping developers reduce beany off-notes in new products.
